Last week I really felt old with the cough still lingering, weird aches and sleepless nights. I'm so glad it is the weekend. I realized though that I had not taken this week's mirror project. Did I say weekly? How about weeklyish?
Last night I went to Village Table for a session. I've written about this before and you can see a little more of the set up in this picture. Village Table is a meal assembly business. You sign up for dishes that you want to prepare and they provide all the ingredients including the meat. When you arrive you go to workstations like the one behind me and follow the assembly instructions. One reason I like it is because I don't have to have a house full of ingredients. They do all the chopping, peeling, grating, cutting, etc. and provide all the spices.
I made 4 meals (meatloaf, chicken rellenos, chicken marsala and pork tenderloins). Each meal splits up into 3 or 4 meals for me so now I have 15 meals sitting in my freezer for about $5 a meal. So worth it to me considering how much I really don't like cooking, shopping, etc. Now when I go to the grocery store I'm not having to think about what I am going to fix for dinner. I just get side items, plus stuff for breakfast and lunch. It makes things much easier. And of course eating in is so much better for my wallet (and my health) than eating out.
By the way, this is what I look like at the end of a Friday night at the end of a long week. Not pretty!
