Make Ahead Breakfast

The next couple of months are going to be highly stressful at work so I’m trying to put some things in place to ease my anxiety level. One of the these is to eat a filling breakfast.  My breakfasts tend to be cereal, drive thru or nothing.  None of these is a good option.  

I searched on Pinterest and found a recipe for a “muffin” frittatta.  I decided to make some of those as well as breakfast tacos and stock my freezer for the week.

I used the recipe as an outline but changed up some of the ingredients.  For mine I added tomatoes, mushrooms, green onions, bacon and a sprinkling of cheddar cheese.  I also extended the time for the hash browns from 10 minutes to 20 and cooked the whole mixture for 25 minutes. I just took them out of the oven and they smell out of this world.  It is taking all my strength not to eat them right now.

Mission accomplished.  I am looking forward to eating breakfast this week from my kitchen.
